The position is a nine-month, tenure track at the rank of assistant or associate professor. The successful candidate will have a 70% research and 30% instruction appointment. The projected start date is January 1, 2021.  Responsibilities: The individual will be expected to develop a strong research and instructional program focused on meat microbiology. The successful candidate will develop and maintain a nationally and internationally recognized, extramurally funded research program in meat microbiology with an emphasis on sustainable production and safety of meat products. Areas of expertise may include, but are not limited to: meat microbiology, meat processing and packaging, microbiological food safety, and molecular biology. The candidate will be expected to collaborate with existing scientists including, but not limited to, those in the Department of Animal Sciences, Poultry Science, College of Veterinary Medicine, Extension specialist/agents, and industry leaders for the efficient production, safety and eating qualities of animal protein. The successful candidate will be a member of the Auburn University Food Systems Institute in the development of partnership programs. The position includes a significant appointment in undergraduate and graduate instruction in the Department of Animal Sciences Meat Science curriculum and Food Science curriculum. Minimum qualifications include: 1) an earned Ph.D. from an accredited institution in Animal or Food Science with an emphasis in meat microbiology at the time employment begins; 2) experience and training in research tools of meat microbiology and ability to independently develop and conduct research in this area; 3) demonstrated ability to teach college-level classes and/or to mentor graduate students; 4) documented evidence of extramural funding efforts. Applicants must be familiar with the FSMA and food safety standards. Required Education: Bachelor or Masters of Science in Food Technology, Food Science or related field Required Experience: 10+ years of experience in product development, 3+ years people management or informal coaching, experience with meat and/or products containing meat, and experience working in a manufacturing setting Preferred:              Meat science degree and 5+ years in the meat industry Commercialization in a USDA environment preferred Understanding of USDA regulations Smokehouse experience including natural and atomized smoke applications Experience in the shelf stable meat snack industry, dry and/or fermented sausage processing.
